Sup Ikan Batam (Batam Fish Soup)

Indonesian islands rich with fish and seafood. Batam, a small island in west Indonesia near Singapore, have special food called Sup Ikan (fish soup). Made from snapper, shrimp, anchovy, and vegetables. It taste savory and sour. Super delicious. If you traveling to Indonesia, go to Batam island, and find a restaurant named “Sup Ikan Yong Kee”, they serve the best sup ikan. Meanwhile you can try to cook yourself.
Ingredients:
- 200 grams of snapper fillet (plus bones and head to make the broth)
- 100 grams of shrimp, peel the skin, tail and head. Boil head and skin to make the broth.
- 1 bunch of fermented mustard, cut the stalks into 3 cm pieces.
- 4 pieces of green tomatoes, cut into 2
- 1 liter of water
Seasoning, fried and mashed:
- 1 1/2 tablespoons teri Medan (Medanese anchovy, dried and salty)
- 1 1/2 tablespoons dried shrimp
- 4 grains candlenut
- 4 cloves garlic
- 3 tablespoons oil for frying
Other spices:
- 4 teaspoons fish sauce
- 1/2 teaspoon ground pepper
- 2 1/2 teaspoons salt
- 2 teaspoons sugar
- 1/2 teaspoon of stock powder
Complement:
Sliced green chili + soy sauce
How to make:
Prepare a pan, fill it with water, boiled shrimp heads and skins. We will use boiled water for broth. Strain broth, discard the bones and head. Pour the shrimp broth to the other pan.
Heat a frying pan put some oil, fried candlenut, garlic, dried shrimp and teri Medan until golden brown. Lift, wait until cold then mashed. Pour it into the blender put a little water and process until smooth.
Enter the spice that has been mashed into the broth, boiled. Put in the fish, salt, sugar, pepper, stock powder and fish sauce. Cook until the fish cooked. Add the shrimp, stir until it change color. Put in the green tomatoes and fermented mustard. Done.
Serve with sliced green chili and soy sauce.
